In fact, the Armor in Dark Souls is a lot more important than in Demon's Souls. It is lighter and has less poise than Havel's armor but has the highest fire resistance of all armor. Knights are fortunate enough to start with this armor but other classes can find it in Prison of Hope. This statistic does not effect the damage you recieve from Magic, Fire, Lightning, and Dark. Smelter's armor as a whole set is probably the most fire resistant set, however each piece save for maybe the gauntlets is beaten out by individual armor pieces from other sets. I know Havels probably is the highest Defense. The only greatshields I've properly tried are Reeve's and Orma's. The Alonne Captains is at number 10 of the Heaviest armor set.
